Fresh Herb Crustless Quiche

Inspired by A Taste of Persia‘s Fresh Herb Kuku

Serves 4

Ingredients

2 tbs of olive oil (plus another 1/2 tbs for greasing the baking dish)

1 cup dill – remove stems

1 cup cilantro – remove stems

1 cup mint – remove stems

1 cup parsley – remove stems

6 scallions – chopped (white tops only)

1 small shallot – roughly chopped

2 garlic cloves – roughly chopped

2 eggs

2 egg whites

1 tbs of flour

1/4 tsp of smoked paprika

1/4 tsp of nutmeg

2 pinches of Kosher salt

Directions
Preheat your oven to 350 degrees. Grease the bottom of a 9-inch round Pyrex baking dish with olive oil. Put all of the ingredients in a food processor and pulse to chop and mix. Pour the mixture in the baking dish and bake for 30 minutes (or until you can stick a knife in the quiche and pull it out without anything sticking to the knife). Serve warm.
You can also serve this as a sandwich. Lightly toast a mini pita bread and cut off the top to open the pita pocket.     Put some feta cheese inside the hot pocket and spread it with a knife. Add the quiche and enjoy.
